Try not to get caught in the latest memes like sous vide, putting balsamico glaze on everything, but do not get hung up on prehistoric ideas stemming from communism or someshit. Always shoot for the best quality and consistency, use the best possible ingredients or try different brands to see if you can maybe get better quality for a better price than a big name brand product. Dont use artificial sauces or powdered shit. If you use buillon cubes or vegeta or something in your broth, all related sauces or dishes will have a decimating aftertaste of said taste enhancers.
If possible, work with home-grown produce from your area, work with the community, especially seasonal stuff. Travel, go to different countries and restaurants and try different taste combinations, unorthodox, widen your horizon, maybe keep a journal or pesonal cook book for your experiences, nothing worse than a bland, freshly learned cook.
Dont be afraid of critique, however be wary of negative opinions, as there will always be some, no matter how good your product is, if the meal is well put together, cooked as it should be, and the person expected something different, well, thats that. Take all opinions with a sizeable grain of salt, even MINE. That said, if people scarcely order a given food, consider it dropping it from the menu altogether, no sense in making preparations if a meal goes out 5 times a month.
A smaller menu with a couple of excelently done dishes is worth tenfold of a menu consisting of 100 different variations, 15 desserts and whathaveyou.
Be wary of asshole colleagues and bosses. A positive work environment (and fucking teamwork!) makes even the hardest days more manageable. Constant flowing communication is key.
Eh, thats all I can think of for now. Maybe not what you wanted at all, but fuck it.
