It was all delicious. Rice and beans are on point as usual. 1 diced onion sauteed in bacon grease, 1 cup dry rice, used 2 cups home made chicken stock. some adobo and packet of sazon and can o beans at the end.

The loin was from a package. It's wednesday not going fancy

I think a lot of it is having a kitchen that works with you. Really got to set things up right so it just flows when you work. Also, knife skills help.

I used rubbed some oil on the skin and bottom. I seasoned with adobo and pepper. I put some oil on the bottom of the pan under the rack to help with sticking. I'm hoping it doesn't burn. It's in at 450 for 20-25 minutes. I'll reduce heat after.
