Kraft Singles aren't the same thing as actual american cheese you get sliced at a deli. It's just a mild cheddar or monterey jack with an emulsifier added, sodium citrate, which changes how it melts. You can make sodium citrate at home by mixing together lemon juice and baking soda. It's not some kind of Frankenstein creation that can only be made in a lab.

Not every chain. For example I've never been to an In-N-Out or Chic-Fil-A that was perceptibly worse than any other location in the slightest respect. In-N-Out achieves this by directly owning every restaurant instead of franchising, Chic-Fil-A presumably achieves it through the power of prayer and Jesus.

Then other places like Burger King and Wendy's are true roulette wheels.
