I make it for pot lucks and what not. Like others have said, put some kind of liquid on it if you are storing it for a few days. Vinegar and/or lime juice sounds fine. I make a very simple dressing of rice wine vinegar and sugar. You will most likely end up with some excess liquid in the bottom of the bowl if you let it sit so you'll probably need to drain it a little at some point.

Goes great with tostitos scoops
