I was in a similar bind, OP. Luckily the owner of the restaurant I was working at ponied up the cash to certify me. It (certification) looks good on a resume and keeps you in a higher salary bracket when applying for new jobs. Of course, if you suck at cooking and restaurant management, then you should proably go to Le Cordon BLeu or wherever they churn out these talentless faggots who can't cook on a line.

This is the problem with you fucking amateurs. When you plate it's not an expression of your fucking creativity. You aren't an artist; you are a fucking cook. Your primary purpose is to provide nutrition in the form of food. When you develop enough skill at couking, then you can concern yourself with: presentation. As you plate, do not forget that you are trying to sculpt a bite. You want them to take a perfect fucking bite every time and you plate accordingly. Using that fucking plate and chocolate shavings to garnish a plate that is a tray for a vessel of panna cotta is pretentious, stupid and only impressive to the sort of people who enjoy a 4 dollar bottle of chardonnay while watching Housewife shows because they think that is classy.
