Lentils are not the slightest bit toxic. Some beans contain a lectin called phytohaemagglutinin, which is toxic. It's particularly high in kidney beans, which is why they need to be soaked and cooked thoroughly. It's not very toxic though, if you do not properly cook your beans you're most likely only going to get some stomach issues that night and maybe the next day. It is possible to die from it in very high doses. Lentils and peas contain none of this lectin.

I'm starting to understand what this man was talking about. I find myself thinking about beans in the same way I think about beer. I'll be at work thinking about eating beans when I get home. I'll think about what kinds of things I can have with beans. I find myself critiquing my earlier bean dishes and wondering what went wrong. One night I was genuinely dreaming about beans all night, sleeping uneasy, and every time I woke up I would half asleep be thinking about making beans for breakfast the next morning.
