Acidity is usually the reason for it to curdle, so maybe your coffee is too acidic.

Cafe Bustelo is pretty good for instant coffee. I like it really strong with lots of milk, no sugar. I put like 3 or 4x the recommended amount and do half water and half milk or all milk.

I like coffee and milk, and when I want coffee I usually make it with equal parts of each. But, I make the coffee really strong so it's not diluted, and I don't add any sugar. The only way for me to get "real" coffee that's strong enough is to just boil or cold brew it so I can use a high ratio of coffee to water, or use pic related. I had this leftover after using it in a couple recipes and it actually makes a decent cup. It's a lot easier to make stronger coffee with instant.

Is there some medical reason you can not use milk or real cream though?

Microwave + mug + instant espresso powder + whole milk + demerara sugar.
This is just more delicious than the powdered artery clogging powder with dubious flavors.

If you wanted really good and lazy both, you can buy the small sized glass and plastic sleeved french press. Nuke the water and fresh ground coffee together. Remove from microwave, attach plunger and cap, and press your coffee.
