What you have to look at is the oxidative property of an oil. In this way, saturated fats oxidize the least. Monounsaturated oils are able to oxidize a bit more but polyunsaturated oils oxidize the most. Oxidation puts “oxidative stress” on your body which ages your cells. That’s why “antioxidants” are beneficial for your body.

Some polyunsaturated oils are so oxidation prone that they could oxidize inside your body from your body’s own internal body heat after you have consumed it. Sunflower oil is actually one of the worst oils and used to be agricultural waste byproduct until they paid the FDA to allow it to be sprayed on corn chips until palm oil came along.
