I always thought it's weird that there is one "Polish kiełbasa" in America. We have so many different varieties of sausage here in Poland. Krakowska and kabanos are my favorites.

idk, but Poland has a lot of variation and a lot of it is very good

kabanosy are probably the most widely loved, they make a great snack
krakowska sucha is also very nice on some dark bread with a bit of mustard or pickled mushrooms

some of my favs which were not yet named ITT:
>ćwikła (pickled beetroot and horseradish salad, great as a side for meats)
>classic polish-style borscht aka barszcz (clear, sour and peppery with meat or mushroom filled dumplings)
>kabanosy (thin, dry sausages, salty and spiced, often eaten as a snack)

I like it, but I never eat it cause it's really expensive
I could buy like 200 grams of nice kabanosy sausages for the price of one tiny packet of this stuff, what the fuck

we have some equivalents but they never really kicked off, might be because of all the traditional kiełbasa available literally everywhere
when people want a meat snack they generally just go for the humble kabanos, probably the best mass-produced sausage around
