I don't know much about cheese but I've been trying out a couple of different kinds lately. I bought a wedge of manchego that looks pretty similar to pic related, and it's supposedly 2 years aged. The first bite tasted good, kind of nutty but also a little milder than I expected. The second bite tasted like ashes. Is my cheese shit? Is something wrong?
