I bet you also tip the mailman, the guy who hauls your trash, the one who repairs your computer, the ones at the grocery store, the one who sold you your house.

You know why waiting tables and bartending is a higher paying job that working in a kitchen? Because working in a kitchen is a job for non-speak immigrants, ex-cons, drug addicts, alcoholics, and various other miscreants who can't maintain their demeanor in a professional setting. It's on the same tier as working construction and pouring concrete. If you can properly present yourself, maintain small conversation like a normal human being, and aren't a complete fuck-up then why are you back there? You enjoy cooking? Do you still enjoy cooking for yourself and family when you get home after breaking your back over a fiery stove for 12 hours?

Not even a waiter here but I'm tired of you "chefs" bitching about something that you supposedly enjoy so much. You knew the pay and the hours when you took the job so shut the fuck up. If you don't like your situation then improve it. If you're that jealous of wait staff then become a waiter. Or better yet get a real job.

Not a horrible beer selection for a big chain restaurant. Not good either but I've seen worse. I enjoy much craft beer as well but you can't expect every place you go to carry them. Drink those at home or go to better restaurants.

Also, I like beer in general so the big name brews don't bother me. I'd rather have a nice craft brew but I'd also much rather drink say a Budweiser than not have beer at all.
