You also want to cut it with something. Some authentic places use cottage cheese or sour cream. I like mayo personally.

Fine diced red onion, mayo, fresh lime juice, fresh cilantro, salt&pepper

Add fresh diced jalepeno if you want. Tomatoes suck, sub with jarred red bell pepper instead
