How do I make proper beef jerky? My jerky just doesn't taste right. I steam the meat to cook it, then let it marinate in a mixture of Soy Sauce, Worcestershire, onion powder, garlic powder, salt, and liquid smoke for a day or two, then throw it in a dehydrator for a few hours. It just doesn't taste right, I don't know how to explain it, and the texture isn't right either. I was hoping for a really dry, salty, old west style.

Anybody here buy bulk beef jerky? Planning on cutting out processed sugars and carbs and so I need something to chew on to tie me over. Beef jerky seems like the best option at the moment, but the price is pretty steep and I don't want to get fucked in the ass by sodium. Any recommendations or alternatives?

If I ground jerky into powder, could I use it as a carnist flour for breadmaking? Gluten is just a protein, and meat is high in protein right?

I'm thinking about trying it, but want to learn if there's a good reason it won't work before spending money on the ingredients.

Hey /ck/

I'm normally over at /fit/ but I'd like to pick your brains about something. I recently got a Breville smart convection oven and I would like to take a crack at making some jerky (beef/chicken/turkey).

Any recipes that you would recommend?
Is there anything speicifc I have to do to have more moist jerky instead of something super dry?
I'm trying to aim for low carb/high fat/protein (part of a keto diet)

I appreciate you suggestions.

Just got a fancy-ass meat cutter and busted out my dehydrator.

Give me all the best marinades you can for a good jerky. Any marinade/rub any meat.

Probably gonna be starting with a teriyaki beef jerky and maybe a bacon garlic jerky, but I'm open to anything.

Hey /ck/, have you ever made your own beef jerky?
I've always been interested in charcuterie, but never tried it myself either to easy access to dried meats or not having the right environment to do it.
Well recently I remembered that episode of The Simpsons where Homer made jerky, so I've been looking for recipes.
Nearly every one I've found online is a "fast" method using just marinating and baking it in an oven.
As far as I know, the meat is traditionally hung in a dry environment and aged for a few weeks. Are these quick methods simply used for safety?
Have you ever done it the old fashioned way?
I'd like to know how!

Is it just me or has jerky gotten way more expensive in recent years? I remember that only a few years ago decent jerky wasn't cheap, but it was affordable. Now even crap jerky prices are through the roof.
