I have perfected cheat barbecue.
I don't have a smoker or grill (apartment life), but what I do have is a particular set of skills. Skills that make my cooking a nightmare for barbecue purists.

The secret is the sous vide and broiler combo.
>sous vide to medium-rare 2-3 days (optional: sous vide with some dry rub on, or sous vide with liquid smoke)
>thick coat of dry rub, broiler
>(optional) sauce, broiler

I just did 2/3 of a whole brisket in this manner. It was amazing. The fat was creamy and flavorful, the meat was extremely tender and covered in a perfect outer char.
It's not "real" barbecue, but it's better in some ways and worse in others. I would recommend giving it a shot to anyone who doesn't have the means to barbecue at home.
