You'll probably find something here
If you want something really esoteric, consider the girolle for Tête de Moine, which is a tool to make a special cut for one particular Swiss cheese. Probably hard to find outside of Europe though

This thing is a tool for scraping *one* particular kind of cheese (tête de moine). Apparently it greatly helped the sales of the cheese after its invention

I don't know why pic related exists, it's an unitasker to cut one (1) particular cheese in a particular way and that's all.

Yours does look much better, I'm just getting images on google.

This one isn't actually French, it's from the french speaking portion of Switzerland. I'm just including it because it's one of my favorite cheeses by far and everyone should get some. You don't need the girolle to enjoy the cheese although you should still aim for very thin slices. Also the girolle is just fun, so if you like the cheese, consider investing in one.

the fluffy white part is like fluffy cream cheese, the melty looking part is like camembert, the gray lines are fruit wood ash.

I'm pulling this out of my ass right now, but my theory on why cheesemaking became so huge in Europe was because of dietary restrictions during the middle ages. Christians were forbidden from eating meat on Fridays or during lent, so cheesemaking took off in order to provide something tasty for people when they couldn't eat meat.
