Been making this in bulk for the entire week leading up to my finals. I melt some butter and make "home fries" (I just recently learned this term & hope it's not misuse here - I mean pan-fried diced potatoes). After 5 minutes I put in diced Chinese eggplant, zucchinis, onions and bell peppers. Sometimes I put in daikon (turnip) for a bit of crunch, and chickpeas whenever I know I need to be busy & keep myself fuller for longer. At the end I chuck in lots of roughly chopped garlic, diced tomatoes and a can of sardines for salty flavor. Cayenne, garlic salt, oregano, cajun seasoning & hot sauce for a teeny bit of fishy protein (I know it's not super nutritious, but this is a decently balanced & quick college meal). Turn off stove & melt chunks of harvati cheese all over. Top with spring onions if you like. Sorry bout the Instagram filter, my kitchen has very dim lighting.
