so what's at play here seems to be that carrots grow in the same way trees do, and the freezing process has damaged and softened the fibres in the same way it occurs with meat.
loosening of the bonds results in a spongier texture, the dense core is mostly still intact while the outer middle layer is vertically split
in contrast, the outer most layers before the skin acts similar to a cambium layer, with the skin and cambium acting like a tube, the contents are held inside and kept flexible.
if I split these I should do them like traditional singles in a circle for structural integrity, doing in layers would result in mush
