All right boys it's been 12 days since I started corning some beef. I meant to take it out at 10 but I had some changes of plans, no big deal though.

There's nothing really special at this point.
>rinse brisket and place into 8 qt pot
>roughly chop 1 onion, 1 carrot, 1 celery stick and put on top of brisket
>cover with water by one inch
>raise to boil and then turn down to simmer
>3 hours
