I am an at home cook trying to get Into the industry cooking. I know I'm likely to start off as a prep cook or a dishwasher but no matter where I go I need experience. This is really making it difficult to follow my passion.

My plan right now is to volunteer to work for free in the kitchen at a cafe within walking distance from my house doing whatever (probably dishes, hopefully prep) after a few months when I can say I have experience start looking for something with pay.

What do you think of this plan /ck? I do plan on culinary school but only after I have some experience. After all that's what counts.

I made this a few weeks back so I can't time stamp it. I didn't know this was a thing on CK till today so I'll keep that in mind. But this is pork confit with a sage butter sauce. Side of garlic mashed potatoes and duck fat Brussels sprouts. The confit was slow cooked in duck fat then pan seared. The sauce was made with the fond from searing. I've re-done my recipe since this so I'll try to remember to post it in the next one.
