I don't use salted butter since the salt is abrasive and corrosive to knives. Same issue sometimes occur with cheese I've found. Cheese is very abrasive to knives. A gouda tends to be in the realm of a 600 grit diamond stone, something like a parmesan can be as much as 240 grit. Soft cheeses don't really correspond to a diamond grit nor is a strop a really good allegory but you could consider a lengthy session cutting brie on a cold day to be around as abrasive as using a compounded strop for several minutes
