My understanding was that cast iron holds onto heat longer. It certainly doesn't heat up faster than my normal steel cookware. It also isn't necessarily even.

Top row is cast iron, bottom is aluminum. If anything aluminum is used by everyone in the restaurant business because of its even heating.
