Most variety of food, and generally at least pretty good, you could write an entire post about each region, highlights are Sichuanese, Cantonese and Jiangnan
Shandong and Western/Muslim chinese cooking are highly underrated though, they tend to be more starchy and hardy than southern cuisine, and use more bread, pic related was the best meal I had in Shandong.
There were alot of things that wowed me, but the best unironically was Peking Duck, shit was so fucking good

>Korea
Pretty decent, not much variety, definitely a very unique flavor profile (ssamjang, gochugaru, kimchi, etc) if you lived in Korea for a while it's definitely more like comfort food, stuff that developed from what poorer farmers ate
Drinking with alcohol is alot more common, and actually makes it tastier, korean alcohol culture is very very well developed, they have like a million games, different cocktails and names for different shit
Highlights for me were Doeji Gukbap, Jeju Black Pork, Marinated Galbi and Kong Guksu,
nothing really wowed me though

>Mongolia
I can't say much as I only tried it a few times in Korea, but the places seemed legit.
Generally, not much use of spices or seasoning, lots of meat and milk, much more hearty
Despite that it's actually pretty good, Khuushuur is pretty good, milk tea dumplings were interesting, it's not high cuisine but it's the ideal meal for a cold winter day

>Japan
Can't really say that much more than what has been said, decent overall but nothing super amazing, not much variety though
