Well, sometimes time and resource an issue. I dont think its fair to say someone is lazy for making a sandwich because they dont have time to whip up quiche just for lunch.

Fresh is better tasting, I think, but in truth, much of human consumption needs are not based on simply taste.

Taste and freshness are luxuries of time, resource,utilities and knowledge, but they dont compose the needs of most of our consumption. Quality and appeal aren't the same thing depending on the context.

To put it one way, form follows function, others might point to demand and market forces.

Consider the caveman who plucks a ripe fruit while on a hunt for something he presumably has to spend time on cooking later. The quality of each is relative, but the appeal is suited to the needs, time and availability.

I generally agree with what you're saying, I just think there is more to consider.
