You'd have to elaborate about the staffing and setup in both situations for me to form a response. The physical environment, neighborhood, quality of machinering and worker commitment all matter. I will say I don't beloeve you however, I never worked in a union or non union restaurant where the place wasnt trashed by the end of the night every night pretty much.
