Not him, but I staged at a bunch of places when I lived in SF before I found a place that I wanted to cook at. It benefits the employee as much as the employer, because it allows you to see the way the kitchen/management/staff works and decide if it fits your personal style and temperament. You usually get paid for it (in high-end places) or at least comped a couple meals (in less-fancy spots)
