I hear you. I'm in a similar situation and I've been at that ready-for-change point for a while now. I mean, I don't know about line cook but kind of thinking more like >>17100070 and just throwing a hail mary. All I know is I can't keep doing what I'm doing.

Now that I think of it, I don't think I've ever had any sort of Japanese food other than sushi. And that's just fish and rice so it's hardly unique in that I've had fish & rice dishes that weren't technically sushi so it's whatever. Also I'm pretty sure all the sushi I've had has been made by Koreans larping as Japanese so I'm even further removed from knowing anything about Japanese food. I'd like to think I'd visit Japan one day and experience some of their bullshit but I doubt I will with the covid fake retarded shit making travel a pita. Plus I remember reading the story about that girl who was abducted and raped/tortured for like 2 months in Japan before the guys just set her on fire and killed her so I'm pretty much convinced all Japanese are monsters and I don't care to change my mind about that. And one time my uncle visited my family years back and he had just come from a working stint in Japan and he smelled pretty bad so idk the Japanese have a lot of work to do in regards to their image.
