Interesting to see if someone manages to come up with a dish that's primarily about the chili peppers other than stuffing them. I bet this is gonna be a tough one to judge either way though.

>I prefer more of a warm simmering burn.
You want chilli oil anon.

I make my own, just blend dried chillies and some seasonings you like and boil it all up in oil.

Protip: Do not. Smell. The blender dust.

This, really. Hottest thing I've eaten was a raw bird's eye chilli. I'm not much of a heat seeker.

Spiciest dish was either a grilled fish I marinated in this stuff, or a thai noodle broth thing someone gave me that had way too much chilli powder on top. Both were hot to the point that I could barely taste anything unless I had the tiniest amount mixed with a neutral dish.

I make chinese style chilli oil which is blended and cooked for a while, so it's ready straight away, but it seems to last pretty much indefinitely in the fridge. At least a few months.

I'd just try a dab on your finger until it's hot enough for you.
