My mom got a bunch of these for free at a food bank, I use them to season my chicken breasts and it taste good.

I don't have a recipe with me atm, but as far as method goes -

1) Brine it. I would only brine chicken breasts for 1 or 2 hours max (it may be too salty if you do it longer)

2) Cut it up (or pound it a bit, or both - your choice) so that most of the different pieces are of similar thickness. This will make cooking times more even.

3) Make a seasoned flour mixture. Flour, salt, black pepper, + whatever spices you love. I'll add some cayenne, garlic, and a couple packs of Laura Scudder's Green Onion Dip Mix (sounds trashy, and IT IS, but your fried chicken will taste amazing).

4) Coat chicken pieces in your flour mixture, let the pieces sit in the fridge (spaced out, on a pan or plate) for 20 mins after coating. The flour will hydrate on the chicken. Doing this makes the rest of the layers of coating stick.

5) Add eggs and some water to your seasoned flour mixture. Make a thick batter just a bit thicker than pancake batter. Crush up some Saltine crackers and place those in their own bowl or tray.

6) Dip the chicken in batter, shake off excess batter, dip the chicken in crushed saltines. Once you are done let it sit in the fridge for another 20 minutes (spaced out, don't pile those pieces on top of each other). Now it's ready to fry.

7) I think lard is the best for frying chicken (bonus points if you can get some bacon fat). Inb4 "but lard is unhealthy!"... it's fried chicken, if you are making "healthy" fried chicken you're doing it wrong.

TL;DR extra crispy, delicious, triple-coated fried chicken, that will make him leave his gf for you
