Gelatin is an extremely fancy dish dating back to like the 1400s, when you had to simmer like an entire pig down and also somehow refrigerate it.

The postwar period brought with it several things: widespread access to refrigeration, widespread access to newfangled, easy to prepare foods like instant gelatin, and a population of people who were on strict rations for several years and were now eager to experiment.
