sometimes I enjoy masching my potatoes with some boilt carrots or leeks. it makes it more interesting when I feel plain potates are a bit mundane.

also a good way to get rid of excess carrots or leeks that tend to sit around without a purpose

Cawn Beef General

I picked up a corned beef brisket which I'll be boiling tomorrow with some potato and carrot mash and cabbage.

I've had very inconsistent results each time I've made it. Sometimes it's tender and juicy and other time tough, other times dry.

What are your best tips for seasoning and boiling one of these bad boys?

Oh I've also taken to including some carrot into the mix (about 2 parts potato to 1 part carrot) it's so goddamn good with a little butter and thyme

that sounds nice. I assume they boil well too? I'm def gonna have to try this. I make mashed potatoes with carrots a lot because it's fucking magic to me, but I might even like some parsnip mash more, I don't always like the sweetness of the carrots.
