It depends. A properly prepared dish of chili con carne should be very chunky if eaten as a standalone meal. But remember, we have Tex-Mex too and a key thing for Tex-Mex is pouring chili con carne over the top of things like burritos, enchiladas, etc. This type of chili con carne is going to be thinner and probably use ground beef. Both are delicious for their respected applications and technically both are still chili con carne.
