Canonically they're vendaces (vendice??) or perch and there's also some pork layered on top for extra fat. The bread is a mildly sour and dense mix of rye. Texture is pretty much what it looks like. It's a very "old school workhorse"ish food; not meant to look good or appetizing but more like something that your wife would pack in to your lunchbasket next to your axe in the morning before you head into the woods with your buddies to cut some trees. Very dense in calories and doesn't spoil too easily. I really want to buy these whenever I see them in the stores but quite frankly it would take me a week to eat one and I'd get over it after the first two bites.

Kalakukko (fishcock/fishrooster)

Rye crust full of fish and pork belly, baked in masonry oven for 5-7 hours so fish bones are pretty soft.
Choice of fish is a can of worms. Some people prefer vendace, others (like me) perch, some like roach (the fish, not the bug) and nobody prefers salmon.
Apply butter on crust and eat.

Gotta agree here. Even if I like good ol' pyttipannu, there's something... off about it, like it speaks with slight accent, says å instead o.

Personally I think fishcock should be Finland's pride, especially if made from perch.
