Does anyone else like 'authentic' food because they think it tastes the best most of the time and they also like researching recipes and regional variations?
I hate seeing the idea that I'm only doing this because I'm an elitist who wants to just everyone when it's really not that, for me it started in my childhood around 13-14 when I tried to make chinese, indian and french recipes from cookbooks I found at the library and the ones my mom had and the recipes were very inauthentic and didn't taste good at all.
Am I the only one who feels the same way?

Like the recipes usually leave out/substitute integral ingredients, don't use the proper techniques and are usually very simplified and this is my problem.
t. chinese who's family owned a westernised chinese restaurant and grew up eating westernised chinese food as well as more traditional chinese food
