Ass bread anon here. Don’t fuss over the dough too much during the first rise, it’s ok if it doesn’t pass the windowpane test immediately. I suggest doing two proofs, after the first one the gluten will have developed sufficiently that it will stretch very well. You just want a relatively smooth ball while kneading it the first time. I don’t know why your dough got worse as you kneaded, but it can still be saved. Leave it alone for a bit and come back after 30 minutes. I have never over-kneaded by hand and I suspect you need to be highly autistic to have the patience to do so.
