I've worked around some damn fine chefs, and I can say only the insecure ones are just assholes for no reason. It's one thing to watch everybody like a hawk and provide stern guidance when necessary, in fact I'd rather work for a no-nonsense chef who doesn't feel the need to be everybody's buddy than a lazy unknowledgeable one. But this idea that you're not in charge of your crew unless you're yelling at them for no reason is absolutely retarded.

They have bathroom attendants in strip clubs because they need to make sure no one is jerking off in the stalls or touching the girls with shitty/pissy hands. I can't think of a reason you would want them in a restaurant, other than to make sure the employees aren't slamming H or taking shots in there.
