It's my favorite meal, but I wasn't expecting it to be assigned as our signature dish.

IIRC, there's a reputable claim that cheese dip was invented here. Obviously fondue was likely invented somewhere else first, but adding peppers and cumin might have originated with an Arkansan. Almost every restaurant has it on their menu regardless of the kind of cuisine they specialize in. There are/were cheese dip competitions held annually. At certain times of the year, grocery stores will build a tower out of Velveeta and Rotel. I used to like it, but can rarely stomach it these days.

Personally, I would argue that our signature dish is either fried catfish or chopped beef/pork plates. It's common for churches and schools to fry catfish as a fundraiser. We also have a lot of hot tamale vendors in the southeast (delta) portion of the state.

There's this old black dude who won a James Beard award for his pulled pork. He put the award in a picture frame too small to hold it, and hung it haphazardly on the wall. It's hung crooked on a wall surrounded by other photos and things. Dude just does not give even the slightest of fucks. Pretty based.
