Mexican queso fresco is pretty low fat and often made by locals so it's not as processed as other cheeses that melt more easily, nixtamalizated corn flour has more fiber and nutrients than wheat flour, and it's less calorie dense, mexican chicken has way less hormones and antibiotics than American ones (you can easily tell by the size/smell of the chicken).

Mexico's obesity problem doesn't originate from our traditional cuisine (people in more rural communities are still relatively thin) but rather it's a mix of our genetics and the rise of highly processed foods and drinks in the country. Pic related is a cheap run of the mill restaurant meal in my town, it cost me roughly 45 pesos (slightly above $2) and it kept full until night and I'm a pretty thin guy, it's not super healthy (In hindsight I would have replaced the pasta for a bigger serving of pumpkins) but if you compare it to a McDonald's meal of the same price it's not too bad nutrition wise.
