Olive oil
Dijon mustard
Fresh crushed garlic
Chopped rosemary
Salt/pepper
Cayanne pepper
Chopped shallots or a vidallia onion

Mix all that together for your marinade. put it in a large plastic bag, add the leg of lamb and make sure the lamb is coated well before putting in the fridge for your two days

After you take the lamb out for cooking, carefully cut underneath the layer of fat (but stay on top of the meat) on the outside and slide some whole rosemary sprigs under the fat

If you're roasting it in the oven, make sure that its elevated in the pan, so its not soaking in grease while it cooks. Pour the rest of the marinade over the lamb 1/3rd of the way through cooking. Do the same for the next method.

I recommend putting it on a spit and roasting it on the grill slowly for a while. That way the layer of fat on the outside gets nice any crispy and all that flavor from the marinade is even over the whole piece of meat.

NEVER ADD MINT TO LAMB UNTIL AFTER ITS COOKED
