Hot enough to sizzle but not much hotter than that. I prefer to take my time with meatballs and get them cooked through. Not like a steak.
Also, I should mention than the raw oats rusk will need to sit for half an hour at least before mixing with the meat. You can mix it with the onions and seasonings right away, though.
