Maafe best girl, as long as it's swimming in palm oil and with big ol chunks of yam and plantain.

I love making Maafe, which is a West African peanut soup/stew. It's a really wonderful combination, really warm and hearty, and delicious with basically any meat or in vegetarian form.

I use this recipe

However, I like to change it up by either using green plantains, pumpkin, yams, or malanga along with the sweet potatoes. Sometimes I'll use goat or beef meat instead of chicken; I've even used fish or just left out the meat altogether. Adding spinach or collards to this dish really livens it up, and if you have access to them, scotch bonnet or habanero pepper adds the requisite heat that I think the above recipe lacks. Some cumin for good measure is great as well.

Overall, served over rice or (more traditionally) with fufu, you couldn't have a more warm, comforting, or delicious autumnal dish.
