Let talk bone marrow, /ck/.
I have recently bought a shitton of marrow bones. Both long cut and round cut. Now, I'm trying to plan an entire menu based around bone marrow for a dinner party. Of course, I'll be doing the classic roasted bone marrow with parsley salad and toast points, but I'm still figuring out the rest of the menu. Several years ago, I saw an episode of A Cook's Tour (yeah, that's right, Bourdain) in which he ate a delicious looking pasta dish of baby octopus in bone marrow sauce. I'd love to do this as a first course, but I'm not sure about the sauce. Anyone want to throw out a suggestion or two?
For the main, I'm going to do a roast beef with "marrownaise" instead of bearnaise. Simple, but effective. Also, I wonder how marrow could factor into a dessert mousse? I have some sinister ideas for a dessert.
