I cook steak on medium heat all the time. High heat is only needed for things like stainless steel that don’t hold temp very well and need the help of a big flame to raise their temperature back up after a piece of meat is laid on it. Cast iron, once thoroughly heated, is more than capable of searing steaks on a medium flame.

First key is to let the meat come up closer to room temp. At least 15-20 min of the steak sitting on the counter before you start cooking. I use cast iron over medium-high heat and I let that heat for at least ten minutes to ensure the entire skillet is properly heated. Then I add some olive oil to the skillet and swish it around to coat the surface. Just before I put the steak in the pan I pay it fry with paper towel and I season it on all sides. If you season it earlier the salt will bring a lot of moisture to the surface and you’ll get a grey steak so it’s important to only season it just before it goes into the pan. I drop that sucker in the pan for two minutes then flip to the other side for another two minutes to complete the sear then I keep flipping every minute and checking the internal temp with an instant thermometer and pull it out of the pan about 5 degrees shy of where you want it to end up and let it rest on your cutting board for a few minutes to let the juices redistribute and the internal temp to rise another few degrees.

Cast iron in one for or another is a must. I’ve used my stainless steel plenty of times but nothing Sears a steak as well as cast iron.

Shit ain’t hard. Pan hot, add oil, throw in steak, sizzle sizzle sizzle, turn after two minutes, sizzle sizzle sizzle, add two oats of butter, crushed garlic cloves and fresh thyme, turn once every minute while basting the steak in the garlic thyme butter mixture until the steak is as done as you want, finish with salt and pepper.
