I tried a simple chocolate cake today.

It was a disaster.

First thing first, i never managed to give an actual consistency to my egg whites. They were still very airy, porous, even after two minutes of solid beating.

As for the chocolate, i melted it with butter in a bain-marie, but when i tried to mix the melted result with my egg yolks, sugar and flour (not everything at the same time, obviously) it transformed in fucking cement very quickly and became almost painful to mix together.

Outside of my retarded self, what are the culprit here ?
