Vietnamese food, which has heavy French influence due to nearly a century of French occupation there. They make good bread, and lean heavily into flavors of fresh herbs, fermented fish, and green chili. They use primarily jasmine rice, like most of southeast Asia, and eat a lot of vegetables. Many people know phở, a noodle soup with a complex broth, and bánh mì, a sandwich on French bread, but my favorite Vietnamese dishes are
>gỏi cuốn, a shrimp roll packed with fresh herbs and veggies
>gỏi xoài, a salad of green mango, radish, and carrot with shrimp, herbs, peanuts and chili
>thịt kho, slow-braised pork belly & boiled eggs in a caramel sauce
