I made Adam Ragusea's chocolate cake with Italian meringue frosting with my sister last weekend. We didn't bloom the cocoa because that seems dumb, but maybe we should have. It wasn't as moist as I would've liked, but it was still nice, and I'm not super experienced making cakes so I probably fugged something up. She shared it with all her friends and they liked it so it's a win I guess. I've done a few things with hot sugar before, but it was my sister's first time working with it and she was pretty scared of burning herself, but we both ended up safe and burn-free so that was good. All up it was well worth it, and I would definitely recommend making it.
