I did a year at JWU and was infuriated by how laissez-faire a supposedly good culinary school was about basic definitions, but for fucking CIA to give such a retarded definition just kills me. Who the fuck doesn't season stock to taste? You should never not be able to taste your stock and say, "yeah, that would be edible if I added X,Y,Z". So you season it to the point that it can be enjoyed on it's own, yet it's still a broth when you use it as a building block for something more? Seriously, somebody please give me one reason why I should take anyone who uses, "bone broth" seriously.
