thoughts? was also considering a vichyssoise or nage in place of broc puree. im visiting my home for christmas and my moms boyfriend is making crabcakes, so we need a cold salad course before personal beef wellies (mixed mushroom/brandy/thyme/garlic duxelle, veal demi glace i made a few months ago and posted here, probably shaved carrots with a peeler in lemonette with honey/salt/pepper/cayenne roasty carrots).
