Yes, all of them. Even the shit-filled ones (intestines) can be cleaned and used to make sausage skins. There is a membrane on the liver that can be used to wrap meat patties. Hearts can be stuffed full of butter and herbs, then covered in foil and slow-roasted to seal in the flavour. Kidneys can be put into meat pies like pic related. Lungs are a key ingredient in making haggis. Eyeballs are a delicacy in the middle-east, usually served directly from a boiled head. Brains can be fried or barbequed (just be careful where you get it from as they can carry prion diseases). Bone marrow can go into soups and stocks. Even the gristly bits you cut away can be composted or fed to an animal with a stronger stomach (e.g. dog food).
tldr; Every part of every animal has a use. Everyone knew this until about 200 years ago.

Talk to someone in the meat supply chain (butcher, slaughterhouse, farmer, etc). You might have to drive somewhere in the countryside, but if you have a decent sized freezer this usually still end up being quite cheap.

In English there is a distinction between a pie and a pastry. A pastry tends to be sweet and served as a snack or dessert. A pie is savory and served as part of or an entire meal.
There is literally nothing wrong with a fish pie, blackbird pie, eel pie or a pie made with any other type of edible animal. Admittedly cooking them with the heads and feet sticking out is a bit weird these days but back in the 17th century is was considered a right ole lark. America doesn't have these quaint old traditions because you have no history, but that does not mean you should mock those of us who do.
If looking your food in the eye harms your appetite I would suggest starting your savoury pie journey with a steak and ale pie. Then branching out into steak and kidney pies, chicken pot pies, cheese and onion pies, fish pies and the like. When you are feeling more adventurous you can try pork pies and eel pies. Then and only then can you try a pie that will wink at you as you eat it such as a traditional blackbird pie or the notorious stargazy pie.

Except for a few months in the Summer, Britain is a cold, wet, windy island in the North Atlantic.
Cuisine has traditionally revolved around hearty, filling, warming meals.

Britain has a long history of stews and Pies(and meats in pastry) but let's not forget the long history of Britain and it's colonial tendrils.

Brits have been eating 'exotic' spices from the far reaches of the world, since the middle ages, long before they were available on the European continent.
