A good "liquid" French cheese is Cancoillote, but soft cheese means it couldve been Saint Félicien, Brie, Camembert, Chaumes or Coulommiers, and many more...

Does anyone put spices in their omelets? I just put salt in mine and then pepper on it afterwards, but I'd like to know if there's anything else that goes good in them, spice-wise.

How long do I have to wait for flavors to "set"?

I know it's about 10 minutes with steak or any other larger piece of meat, but what about things like roast vegetables? What else does this rule apply to?

Also what to put in it? I'd make it with diced tomato, diced bell pepper and diced mozzarella unless someone has a better idea.
