Still a v wise and mentally acute chef, just not bothered what so ever any more about the food....

depends on the cut desu
the loins are good brined then grilled
the tougher cuts take well to a very very gentle braise (lots of port or summat similar)
offal makes a banging sauce, or if the animal is very healthy and fresh, seared and raw
